Lessons learned the first 50 years

I hit a milestone. I turned 50 years old. I am thankful that I don't feel 50.   I am thankful for things God has taught me throughout those 50 years. .  I have learned that God loves mercy and when I feel a sense that justice needs to happen over mercy, all I need to do is remember that I am thankful for when God gives me mercy instead of a just punishment.   (Micah 6:8 8 He has shown you, O mortal, what is good. And what does the LORD require of you? To act justly and to love mercy and to walk humbly with your God.) ( Luke 6: 36  Be merciful, even as your Father is merciful. ) I have learned that hurt people end up hurting people.   When I am able to see that I didn't hurt them but I am bearing the results of that persons hurt inflicted by other people, it helps me forgive whatever hurt they pushed onto me and move on.  (Romans 12 : 18  If possible, so far as it depends on you, live peaceably with all. )  I have learned that anyone who thinks they have God

Comfort Food-Shepherd's Pie

When I need to make a lot of yummy food, I tend to make Shepherd's pie (gluten free for our family). Here is the recipe. It takes awhile but it is so worth it.

1. 3 pound chuck roast is cooked in a crock pot with 1 cup of water/ of beef broth, 1 can of cream of mushroom soup, one sweet onion (diced), 1/2 clove of garlic, 1 teaspoon of salt, 1 teaspoon of pepper. I cook it on low for 12 hours. Once it is cooked, pull apart and set aside to be used in the shepherd's pie.

2. Take Bisquick, gluten free Bisquick or, gluten free flour mix and follow the directions to make "drop biscuits" according to the package. That mixture goes into the bottom of a very, large baking pan. Bake until the biscuit bottom is cooked.

3. Make your favorite mashed potatoes , substituting chicken broth instead of milk if you need to avoid the milk.
4. Add a layer of mashed potatoes on top of the biscuit bottom. Then, add a 1/4 inch layer of roast/sauce made from the roast. Next, top that with drained sweet peas. Next, top with cheddar cheese or rice cheddar cheese... about 1/4 a cup for each layer. Then, repeat, mashed potatoes, roast mix, sweet peas, cheese... Repeat until the casserole dish is nearly full.
Preparation:
Bake at 350 for twenty minutes or until top is golden brown.

It will feed a small army...a small, happy army. :)
